From the Allgau region in Bavaria, Germany, this mild blue is produced by an Ecuadorian cheesemaker, Arturo Chiriboga whom had mastered the art of German cheese making, at the foot of the Alps in Bad Oberdorf.
Aged between 2 to 4 months, Chiriboga Blue resembles rich, cultured butter more than a peppery, assertive blue. The ivory interior produces a subtle flavour of sweet cream and grass with a balance piquancy.
