Aged for 14 months+, L'Etivaz is a truly artisanal cheese still made today honouring the traditional methods and techniques that give the cheese its unique character. Made in the Hamlet of L'Etivaz in the Canton of Vaud in the Southwestern Swiss Alps. Produced with only grass fed summer cows milk, the curds are cooked trditionally in copper vats over open fires which lemds the cheese (essentially a traditional Gruyere) a smokey note on the finish.
